What Simultaneous Demand Means
Simultaneous demand is the total hot water your home draws when multiple fixtures run at the same time. The U.S. EPA describes tankless capacity in terms of flow rate and temperature rise — how many gallons per minute a unit can heat to a target temperature (see energystar.gov/products/whole_home_tankless_gas_water_heaters). That figure changes with your incoming water temperature.
For a storage tank, simultaneous demand is what the stored volume plus recovery can sustain before the tank empties. Both types are limited at peak use — just in different ways.
